Freshness | Storage

Short answer is: Yes refrigerate your macarons. But serve at room temperature.

But a more elaborate answer is needed. There are two types of macarons: Buttercream and ganache filling.

At Pastreez, we handcraft our own ganache fillings, made with white chocolate (no butter). They are smoother, tastier, and hold better at temperature variation.

For more insight, we’ve published a comprehensive article on macaron refrigeration.

Yes you can freeze macarons for over 6 months.

However, they won’t taste quite as good as when fresh. Thawing releases moisture, which can slightly affect the macaron’s delicate balance of crunch and softness.

More information on our blog post: Can you freeze macarons.

Macarons stay fresh for over 14 days in the fridge, and even longer—up to several months—when frozen.

For more info, check out our detailed article on macaron shelf life.

Store in the refrigerator for over 14 days or freeze for up to 6 months. For the best texture, always serve at room temperature.

When possible, refrigerate rather than freeze — thawing can release moisture that slightly softens the shells and affects their crisp-soft balance.

Macarons info

Yes, authentic macarons are gluten-free — and Pastreez macarons follow the traditional recipe.

If you order from another bakery, it’s wise to confirm with them, as some may add extra ingredients.

You can read our comprehensive article for more insight on macarons and gluten.

Check out our blog post where we explain macaron calories in detail.

Our macarons are not dairy free. We use white chocolate.

Almond flour, sugar, egg white, food coloring, homemade ganache. We also add food coloring.

All our ingredients are naturally gluten free. Our macarons are low in dairy but not dairy free.

Almond flour, sugar, vegan white chocolate, Strawberry fruit purée, Oat milk, Pectin, Coconut cream & oil, Potato Protein Isolate, Plant Cellulose (E461), Xanthan Gum (E415) and Locust Bean Gum (E410).

Macarons aren’t expensive because of the ingredients, but because of the delicate process behind them.

Each batch takes three days to prepare from start to finish. Perfecting the recipe takes years of experience, and even then, up to 20% of a batch can be lost due to factors like humidity and temperature — making every perfect macaron a true labor of love.

We wrote a full blog article on why macarons are pricy.

Crêpes

Prepared fresh with every order—just like our macarons—and vacuum sealed for maximum freshness.

We use insulated bubble pouches, air cushions, and durable corrugated boxes to protect your treats in transit.

No, crêpes are not pancakes. The main difference is that pancakes contain baking powder, which makes them fluffy — while crêpes do not, giving them a more delicate texture.

Crêpes don’t contain baking powder, which makes them lighter and lower in sodium than pancakes.

Unlike pancakes, which use baking powder for fluffiness, crêpes skip this ingredient—avoiding the excess sodium that, in large amounts, can be harmful to your health.

No, traditional French crêpes are not gluten-free, as they’re made with all-purpose flour, which contains gluten.

However, there is a gluten-free alternative: crêpes made with buckwheat flour.

Each crêpe contains approximately 256 calories, though this may vary by flavor. For example, a Nutella crêpe will have more fat than a strawberry one.
